Autumn's Bounty

If you have a glut of tomatoes then turn them into a delicious soup
I never use precise ingredients for something like soup it all depends on how many tomatoes I have from the garden (roughly 1 kilo)
Halve and quarter tomatoes leaving the skin on (apparently the skin contains lycopene which protects our immune cells from destructive free radicals), chop red onions, a red pepper, a small red chili, press a couple of fat cloves of garlic, place everything in a roasting dish. Sprinkle all over with a little balsamic vinegar, a little sugar, black pepper, small pinch of sea salt flakes (optional), scatter with fresh thyme leaves, finish with a good drizzle of olive oil. 
Roast until ingredients start to turn brown and caramelise 
Place the roasted tomatoes etc in a saucepan adding ¾ litre of vegetable stock and a good squeeze of tomato puree. Cook for a further 20 mins and then blitz to a very smooth creamy consistency. This makes a richly flavoured, nourishing, thick soup
Garnish with Parmigiana cheese and basil leaves
I have shown this recipe before but it is so simple to make and very delicious

  4. Your tomato soup sounds both fragrant and delicious Rosemary. I have copied out the recipe and will try it soon; I will be on the lookout for tomatos on special as my efforts at growing them are quite disastrous!

    that looks and sounds delicious! Sorry we have no garden in Berlin - and flowers take up the room on the balcony - but "real" tomatoes, having ripened in the sun: a delicacy!

  9. Hello Rosemary, The weather here is just starting to turn a little cooler, leading to thoughts of baked goods and simmering soups. I still haven't tried the trick of roasting all the vegetables first, but am determined to this fall.

  18. Copied out and will be trying this week. I used to make a roasted tom soup and had forgotten all about it. The wet and windy weather here today certainly makes it feel as though soup will be appearing on the menu more often from now on.

    1. I was really surprised the first time I made tomato soup that it turned out to be the same colour as tinned soup. I had always thought the colour from bought tomato soup was false and that the colour was artificial, not so.

  24. These photos are simply luscious, Rosemary. And I'm sure the soup is too. It looks easy enough. My neighbor gave me a bunch of tomatoes from her garden and I've been wondering what to make. I though of tomato pie but maybe your soup recipe will be a bit easier. :) Thanks for the recipe.
