Creamy Portobello Mushrooms

 Take some firm, meaty Portobello mushrooms - their Italian name 'Cappellone' - 'big hat'

thickly slice

adding chopped garlic sauté in olive oil and butter - season with freshly ground nutmeg, and black pepper

Finish with Greek yogurt, a dollop of cream, and plenty of chopped fresh parsley
Ten minutes only and supper is ready - serve with rice, vegetables and a sprinkling of Parmigianino cheese

    You take the most wonderful photos. Are you using a large DSLR or a compact camera? I have a DSLR but it's cumbersome to carry all the time and I wondered if you were using a small camera, and in which case, which one? I need to replace my small Pentax which, after much use, has the piece of plastic (which holds in the battery) missing.

    1. Dear Margaret - my camera is just a little compact that fits snuggly in my pocket for convenience. I personally could not do with a big camera dangling around my neck or shoulders. I like it but of course it does have its limitations compared with ones that have bigger lenses etc. It is a Sony Cyber shot DSC-WX350 with a 20X lens.

I think your photos are amazing - I have a Nikon D90 (it replaced my D50 which developed a fault and the camera shop said to have it repaired would just cost too much - and then sold me a £700+ camera, and 2nd hand at that!) I would like to be able to have larger photos on my blog, similar to yours, but I don't seem to be able to manage that. I will have to ask my son how to do it.
      By the way, I love the gallery tray on which you have your mushrooms. I need to buy two new ones, but they are hard to find, circular trays with a little lip.

    3. Dear Margaret - I have just noticed that you have already purchased the Sony camera. I wish you well with it, it is certainly a much cheaper camera than the ones that you have been using.
      The way to make photos a good size is first of all you need to reduce the pixels to no more than 800 pixels. You then need to make sure that the margins on either side of the area where you post are wide enough i.e the thin gold lines either side of my post. When you post a photo that is 800 pixels you have a choice of sizes, use original size, and then go to position and use left. If the photo is less than 800 pixels you need to position it in the center.
      Hope that helps.
      I am afraid I can't help you out with information about the tray as it was given to me by my DiL and she purchased it in Paris.

    4. I will have to try this, Rosemary. My blog is by Wordpress and it was set up for me by my computer man. I have to download pix first into a program called Irfanview and then download to my blog, and then I have the option of small, medium or large and the large just isn't large enough! There is plenty of white space on either side, and I know that our son once made my photos larger, so I will ask him again, but I will also see if I can do it the way you suggest.

    5. Sorry my information will probably not work on Wordpress, I had assumed wrongly that you were with Blogger. However, it must be possible for you to use large photographs - I have seen ones used on Wordpress that are much larger than mine. I used to contribute to a Wordpress blog and my photos were always transferred using the same size as on my blog.

  3. Hello Rosemary, Your photos look so appetizing, but I am afraid that I was never one for mushrooms. The only exception seems to the the white fungus (bai mu er, which I wrote about before) and black fungus (hei mu er) that are so common in Asia. They don't have that earthy, mushroom flavor and add great texture to the dishes that include them.

    1. Hello Jim - I think that mushrooms are something that you either love or hate. I must admit that as a young child I did not like them, but that is not the case now.

    I have done the deed. I have gone online and ordered a Sony Cyber DSG-WX350. They are a reasonable price and most people rate them quite highly. Your photos are proof enough for me!

      Everyone is admiring your photos. And yes, they look as if you have used a super expensive camera. You were so kind and shared your secret with me. I also love my DSC-WX350. And it takes great photos...but then there is something called "the artistic eye". You have it. Your photos will always be superior.

  9. Thanks for the recipe. I'm always looking for tasty meatless dishes to add to my repertoire. My mother was well skilled in foraging and we had delicious meals of wild mushrooms. Portobello mushrooms are the closest I've come to recreating the taste.

    1. We had a field behind our house when I was young, and it yielded wonderful mushrooms when in season, some as big as plates. You are right Portobellos are the nearest to recreating that childhood taste.

    1. I use nutmet in many savoury dishes - it is nice on scrambled eggs, in a white or cheese sauce, and lovely sprinkled over a roasted butternut squash too.

  18. Portobello Mushrooms look like our “shiitake” mushroom but size is greatly different. There are no such big mushrooms as Portobello Mushrooms on the market in Japan. The dish looks so delicious, I think I can use your recipe to “shiitake”.
