Apricots Galore

There are plenty of cheap luscious apricots in the shops right now (costing roughly £3 per kilo) so why not make yourself some delicious French Apricot Conserve.
******
one kilo apricots,
750 grams sugar,
Wash and split apricots,
cover them with all of the sugar, 
leave to macerate for 18 hours.
That's all - it's so simple

18 hours later, the sugar will have disappeared and
replaced by lots of lovely viscous juice. Now they are ready to cook.
Gently bring to the boil and simmer for
20 - 25 mins.
Finally pour the conserve into warm sterilised jars, filling them to the top, 
screw on the lids, 
then turn the jars upside,
 to form a good seal
 until they cool. 
What could be easier?

  5. I have never made jams of any kind, but that ratio of sugar to fruit seems really high to me. That is a 75% of the weight of the fruit in sugar (refined white sugar I assume). Better I think to just eat the fruit.

    1. I don't know whether you ever eat preserves or not - jam, marmalade etc, but there is far more sugar in the commercially prepared ones. I think it is a question of balance, a little now and again does you no harm.

  6. Thank you Rosemary, My apricots will be ready in a week. I will try your recipe. In the past I have not macerated mine as long as 18 hours. I will try it this time... it sound delicious.

  7. it looks soooo yummy! Fruits tend to be priced lots cheaper during summer time in Sweden, but the price for berries are still a bit expensive. I really love Swedish strawberries though :d

  10. Oh, I love apricots. We had two trees when I was a child and my mother made wonderful apricot jam. Apricots are just beginning to come into season here and your recipe for conserve sounds delicious. A taste of summer when winter comes!

  13. Hello Rosemary, Your apricot posts are always a feast for the eye. Apricot jam is especially good is some forms of pastry which my mother makes. If we can get some good fresh apricots, we'll have to try some fresh apricot jam in the baked goods.

  14. I love apricots but find them so expensive here on the east coast. I know Gina is ready to pick hers and I mentioned she should consider making jam. My mum made the best jams, apricot and Victoria plum, also lemon curd. Her recipe was probably similar to your version Rosemary. Perhaps I'll look for some next week and make a few jars - we are away for the weekend.

    1. I wonder why apricots are so expensive with you when they are so cheap here? Hope you can find some reasonably priced ones and can make yourself a luscious treat - this particular recipe comes from France.
