I thought it might be tasty to make ice cream using French Apricot Conserve, recipe here, to try out my new ice cream machine
This is my own recipe but it works - it's easy, does not have eggs, but most importantly is delicious
Lightly beat 450 ml of double cream until it is just beginning to 'flop' - the second this happens - STOP BEATING
Gently add 250 ml of Greek yogurt and then carefully swirl in 300 grams of apricot conserve, or any other sweetened fruit mixture or jam that is not firm.
Almonds compliment apricots so I added a small liqueur glass of Amaretto. I understand that alcohol helps to keep ice-cream soft. This makes a litre.
Churn as per your machines instructions.
If you don't have a machine you can place the mixture straight into a lidded container in the freezer and keep mixing it yourself from time to time.
So that looks very tasty!

DeleteI made some peanut butter, banana ice cream once, but this a lot more delicious. Those are beautiful apricots.

DeleteDear Rosemary - It's been a VERY long time since I had homemade ice cream, decades, actually. But one never forgets that distinctive taste that simply cannot be store-bought!
ReplyDeleteDear Mark - I was so delighted with the results it is really delicious - the combination of apricots and amaretto proved to be very successful. I am now thinking of all the different ice cream I can make in the future now that all of the soft fruits are in season.
DeleteI have never thought of purchasing an ice cream maker even though I love the stuff - I have so much soft fruit in the garden at the moment it would be an ideal way of using some of it - thanks for the inspiration - those apricots look delicious as does the ice cream you made.
ReplyDeleteElaine - I bought an ice cream maker because they had them in Lidl for only £14. Their little gadgets are very good and reliable. I expect that they will get them in again during the early summer next year - that is the problem with Lidl you have to get things when you see them.

ReplyDeleteI am not too keen on making ice cream with raw eggs so this works well for me - next time I shall try using raisins soaked in rum, and when the damsons are in season they will be given a try.
