Nut Roast & Chocolate Nut Lava Cake

I am not a big meat eater so was pleased to see a nut roast recipe from Margaret.

I discovered that Lidl sell 200g packets of the recommended selection of mixed nuts so two packets were required
4 shallots, thyme, sage, mint - I have plenty of herbs growing in the garden, but if you don't have access to fresh use dried
400g can of chopped tomatoes, drain away the juice
3 eggs, beaten
150g of strong cheese
1 veg. Oxo cube or a teaspn of bouillon powder
1 teaspn lemon juice
freshly ground black pepper

toast the 250g of nuts in a dry pan being careful not to burn
Put the nuts, herbs, shallots, cheese and Oxo cube in the food processor to blitz until the mixture still has texture but is not pureed
combine the mixture with the drained tomatoes, beaten eggs, lemon juice, and ground black pepper
Place in a parchment lined loaf tin and cook for 45mins at 180℃ or fan oven 160 until golden brown - leave to cool in the tin
Serve either hot or cold
With the leftover nuts why not make a Cake. I found this easy recipe from a Turkish Airline inflight magazine whilst returning home from Cyprus.

 Chocolate Nut Lava Cake
Ingredients 
75g chopped pecan nuts (I am substituting with the leftover mixed nuts)
100g dark chocolate
115g unsalted butter
175g sugar
75g plain flour
2 large beaten eggs
small teaspn vanilla extract
Break chocolate add butter and melt very gently in a bain marie. As soon as softening, remove from heat
add sugar,
then beaten eggs,
vanilla,
stir in flour and chopped nuts
Bake at 180℃ or fan oven 160  for 30 mins  

As indicated by the word 'lava' the cake is 
chocolatey and gooey inside     






















eat it as it is or serve as a dessert topped off with cream or icecream

  1. Hello Rosemary, I think that I gained weight just looking at these recipes! I know that nuts are healthy, but they are still very rich.

    1. Hello Jim - according to the packet there are roughly 1600 calories in 250g of mixed nuts, but this nut roast will last the two of us 5 days so taking that into account do you think that is more reasonable?
      There are, however, probably more calories in the chocolate cake - best restricted to a once a day treat, and a small slice at that.

  2. It all looks great to me! :-) Is the nut loaf something you think you will make over and over again?

    1. Yes, definitely. We are really enjoying it - we are slicing it and eating it cold but having things like roasted butternut squash, greens, or roasted parsnips etc with it. Tomorrow I will make some cauliflower cheese to team up with it.

  4. Dear Rosemary, Both of the creations from your kitchen look very enticing. I have the same problem as Jim of Parnassus. I have a sweet tooth and probably could not go past without making a stop.

  6. Two I will definitely try out Rosemary. Being a non-meat eater I love NUT LOAF - used to make them often but haven't for a while. As for cake, who doesn't love trying a new one and this looks really good. I have a lot of dark chocolate to use up - was gifted with some Green & Black's Organic 85% Cocoa, and although I like dark to nibble on now and then as it's said to be a healthy antioxidant, this one is just too bitter for me, perhaps good in the cake though!

    Yes, my appetite is not what it used to be either - I seem to get full much faster and don't really enjoy my food quite as much. Another sign of 'you know what' I guess!

  7. This looks delicious. Nut Loaf - I'd never heard of it before. I'm not a big meat eater either. For a moment I thought both cakes were one recipe and I was trying to see how I'd like chocolate with tomatoes and shallots. HA! That's what I get for reading too quickly.

    2. The only thing I need to consume is large amounts of water. we have had family here over the Easter holiday and. I have put on pounds. I do love nuts though and these both look delicious!

    3. I empathise with you, it is difficult when you have lots of people staying, and especially so when there were lots of chocolates and Easter eggs being shared around.

  8. The nut loaf looks delicious. I don't know if my husband would enjoy it - he's not much for crunch mixed with smooth foods. But I think it's worth a try and I can probably freeze individual portions for myself for lunches. I do love nuts of all kinds. My herbs are all coming out of dormancy now, as well.

    1. If you let it go completely cold then it slices very well - you could probably get 10 slices out of it, so lots of meals.

    That was a great offer from Lidl and you were quick to react and secure 2 packets.
    We buy unsalted nuts at Costco; cashews, whole almonds and walnuts which we eat with our afternoon tea.
    Your recipes sound very yummy and that makes a great substitute for the meat, at least your nut roast!
    We will soon have a Lidl very close to us as they plan to open 100 Lidl stores by the end of summer in the USA.

    As for our trips to Atlanta, we usually go every 3-4 weeks but these are additional ones because we're transferring our old 8mm movie reels to DVD. They have to get dropped off at Costco and cannot be mailed in, nor mailed out. Guess because of their high sentimental value. So we dropped off our last two batches yesterday and they might be done in about a week from now. Making everything digital and getting rid of lots of things. Slides are done first, last year I managed our photo albums and now the movie reels. Next I have to convert our video tapes. Lots of work but one day we settle back to normal routine - whatever that may be!

    1. Dear Mariette - you are very industrious, those are things that I should really get around to doing too - having everything on tape will be so much easier for you both. I should endeavour to get rid of things in the house that we no longer now need (I dare not put my head up into our attic).
      Lidl is a great shop with good quality food at a fair price - as it happens they also had the shallots on offer that day, I think someone must have known what I needed on my list!
