What's in the Cupboard Today


A very easy, simple recipe.
Flatbreads - makes 8.
250g plain flour
250g full-fat yoghurt
4 level tspns baking powder
I added a sprinkle of chilli powder and a small bunch of chopped fresh coriander leaves and stems.
Leave them plain or add whatever spice and/or herbs you prefer.
Combine all the ingredients in a bowl, knead into a dough then set aside for 10 mins.
 Divide into eight balls, and press out until 2mm thick. I used half of the mixture and left the other half in the fridge to use the next day.
Cook on a hot non stick griddle or dry non-stick pan for 2/3 mins on each side. My electric griddle cooks two sides at the same time and took 3 mins for them to cook.
Whilst still hot brush each side with some olive oil, or rapeseed oil (canola) and sprinkle with a few crushed crystals of natural rock salt.

  1. As you say, pretty simple, and it looks delicious. Miriam baked bread a couple of days ago, one of the bonuses of Covid-19 perhaps!

    1. I think that these are the simplest but easiest things I have ever made, and tasted lovely topped with cream cheese, some smoked salmon, and some young pea sprouts.

  4. Hello Rosemary, These look like American baking-powder biscuits, but fried instead of baked. If I tried something like this I would have to substitute for the yogurt. Perhaps a combination of oil and water, but I imagine that some sort of dairy (unfortunately not in my diet) would improve the flavor.

    1. Hello Jim - you can make something similar using olive oil and warm water instead, but they would be much more like something that we would call a wrap.
      125g plain flour, some sea salt crystals, make a dough with 2 tbsps oil and 5 - 6 tbsps warm water, mix into a dough with hands. Kneed for 5 mins, then form into a ball and leave 20mins under cling film. Flatten out like a pancake, dry fry med heat for 20 seconds, flip over, do same other side.

  5. These look fantastic and I will definitely give them a go - perhaps later today! I have an electric panini maker that looks like your griddle - guess I can use that and will get the attractive grill marks on them.
    Thanks for the recipe. Like many, baking bread has become a joyful pastime lately for me too!

  9. Looks tasty. Usually the sort of thing I would eat if placed in front of me but never make myself. I'll need to broaden my cooking skills as I usually stick to around two dozen meals that I always like but never deviate from that and my taste bubs are bored with the same flavours by now. I've been watching Alex Polizzi: Chefs on Trial last couple of weeks so I'm suitably inspired.

    That is a very simple but no doubt delicious recipe!
